CIEH LEVEL 2 AWARD IN FOOD SAFETY IN CATERING

This module will provide candidates with a good understanding and knowledge of food safety. The programme focuses on eight key areas:
- The Law
- Food Safety Hazards
- Refrigeration
- Cooking
- Food Handling
- Safe Storage
- Cleaning
- Food premises and equipment.
This award will benefit anyone working in a situation where food is prepared, cooked and served. It is relevant to all catering operations.
This award equates to the current present foundation course.
The module allows delegates to be trained in food hygiene practices commensurate with their work activities as required by law.
Course Format
The course is delivered as a group training session with a blend of direct trainer input and individual/group participative exercises. The training is delivered using high quality participant and trainer support materials. The programme includes a variety of training activities to ensure an interesting and enjoyable day. There will be an assessment at the end of the programme that consists of a multiple choice questionnaire in examination conditions.
Course Duration and maximum number of delegates
Course duration is 6 hours in total. This can be delivered as one session or split into two by three hour sessions. The maximum number of delegates is 12.
